Ask Eartha: The great raw milk debate
Once again we're talking about something our ancestors and forefathers did for centuries but somehow got lost in translation to become over-regulated and over-processed. I think the Health Impact News (www.healthimpactnews.com) staff have it all right with their statement: “When Thomas Jefferson was president of the United States, almost 90 percent of the population was involved in agriculture. Everyone drank raw milk and the issues regarding health freedom and food sovereignty we face today were practically unheard of …” Over the last couple of years, there's been an underground war — not on terror, inner-city gangs or drugs (we've all heard about these) — but on milk! That's right, I'm talking about raw milk — unpasteurized milk or “real” milk, in all of its glory, full of untouched fats, beneficial microbes and straight from the pasture-fed animal. Be it goat, cow, sheep, water buffalo or moose (milked in Russia and Sweden), these happy grass-fed animals can produce milk that contain good bacteria that kill bad pathogens while strengthening the immune system. The process of pasteurization, used to kill bad pathogens through high heat and sterilization, often greatly diminish the important anti-microbial and immune-enhancing components you find in raw milk. In fact, the Food Safety Modernization Act passed by Congress last year gave the FDA even more power to “regulate” by allowing the agency to impound food even without evidence of contamination. Many have described this new law as “farm to table control over food safety.” One silver lining in this recession is the budget cuts to the new safety laws that cut back the amount of funding for FDA agents to continue gun-drawn raids on small farms. Raw milk has come a long way over the last 50 years with today's dairy farmers going the extra mile to make sure their milk is safe and top quality. According to The Real Milk Campaign ran by The Weston A. Price Foundation, such internal standards include “pasture grazing, herd testing, effective cleaning systems, refrigeration … and more sophisticated milk and herd disease testing techniques.” Crazy thing is, pasteurized milk can also be contaminated! In fact, contaminated pasteurized milk can be more of a health threat because many more people drink it.Raw Goat Milk - News

Gossamer Tapestry: Goat's Milk Camembert
I've been wanting to try my Camembert recipe with goat's milk for some time now, but I've been stymied by a lack of a source for the milk. Some months ago, my friend Iva mentioned friends in Wisconsin who raise their own milking goats. We have been talking about getting some for me to try. Last week they visited and had two gallons plus a quart. I made chèvre with the quart and was pleased with the results. On Sunday I tried a Camembert.
